Pierre has been in search of the best vanilla grands crus, which include, Bourbon vanilla from Madagascar, blue vanilla from La Réunion, Ceylon vanilla, Tahitian vanilla, and vanilla from New Caledonia and incorporated them into his summer experiences for all to enjoy.

The master in 3 disciplines – chocolatier, pastry chef and now ice-cream maker – has created a collection of “minute whipped’ ice creams using carefully sourced ingredients, unique textures, simple, fresh, and authentic recipes, encompassing the same attention to detail as his chocolates and patisseries.

 Madagascan vanilla ice cream, dark chocolate swirls – intense and smooth the recurring flavour of the summer collection for which the vanilla pods have been lovingly prepared by our experts in the atelier.

Caramel ice cream, caramel coulis, and dark chocolate swirls – unmissable an all-time classic.

Grand Cru Sao Tomé chocolate ice cream, chocolate coulis and dark chocolate swirls – bold and full-bodied.

Pistachio ice cream, hazelnut coulis and dark chocolate swirls – simple, pure, powerful, a Maison favourite with pistachios coming from Iran.

3 flavours of sorbet, exquisitely fresh and light

 Coconut sorbet, raspberry coulis, and milk chocolate swirls – exotic, sweet, and thirst-quenching.

Raspberry sorbet, raspberry coulis, and dark chocolate swirls – ultra-fresh and delicately sharp.

Mango-yuzu sorbet, raspberry coulis, and dark chocolate swirls – fragrant, fresh, and delicately bitter.

Signature chocolat

For the ultimate final touch by the chocolatier: a crisp chocolate disc is placed on top of each ice cream to contrast the extreme smoothness of the ice cream.

Adding to his chilled Summer Collection Pierre has also developed 3 new chocolate recipes combining cocoa Grands Crus and exceptional vanilla, taking his summer creations to the next level. Women Talking had the pleasure of indulging in the Plumier of 18 destinations vanilla chocolates comprises intensely vanilla chocolates in three flavours:

Vanilla caramel: Smooth ganache and caramel scented with vanilla from Tahiti in a dark chocolate shell.

Vanilla praline: Almond and hazelnut praline with Bourbon de Madagascar vanilla, dentelle de Quimper biscuit, lemon coulis, and dark chocolate shell.

Vanilla ganache: Hazelnut praline and ganache infused with Pompona vanilla from New Caledonia and blue vanilla from La Réunion, dark chocolate shell.
