Chicken chilli cheese savoury pancakes

Ingredients for filling:
Grated Pilgrims Choice Extra Mature Cheddar
· 80g chicken mousse
· A generous sprinkle of dried chilli flakes
· 2 x egg whites whisked
· 150g Panko Breadcrumbs
· 1 chicken breast
· 150ml double cream
Ingredients for the herb pancake:
110g plain flour, sifted
· 200ml milk
· 2 eggs
· 1 tsp Chervil chopped
· ¼ tsp blanched chopped tarragon
· 1 tsp parsley chopped
· 25g Beurre noissette
Blend the raw chicken breast until smooth, and then add the cream and blend well. Place into the fridge until needed.
Mix the flour with the eggs and milk until a smooth batter is achieved. Add the chopped herbs and Beurre noissette. Cook the pancakes in a frying pan and set to one side.
Lay the pancake onto the work top. Spread the chicken mousse finely over the whole of the pancake. Sprinkle with chilli flakes and cheese and roll the pancake up. Dip into the egg white and then the breadcrumbs until evenly coated.
Pan fry until golden and place in the oven to cook for 8-10 minutes until ready.
Cream Tea French Toast
2 slices white farmhouse bread
2 eggs, beaten and mixed with 4 tbsp milk and 2 tsp sugar
2 tbsps clotted cream
Small handful of strawberries
Soak the bread in the egg mixture.
Fry in 2 tsp of oil for 2 mins each side, until golden.
Serve the French toast with cream and strawberries on top.
