The popularity, taste and health appeal of nuts persuaded Alpro to develop two new tasty, refreshing drinks – Alpro Almond milk and Alpro Hazelnut drink – both created using a simple blend of nuts and spring water.
Alpro Almond and Alpro Hazelnut drinks are free from artificial colours, flavours and preservatives. Being plant-based, they are free from animal fats too. Each glass (200ml) contains 30% of your recommended daily allowance of calcium and vitamins B2, B12, D and E.
Alpro Almond milk has a subtle taste and is made from lightly roasted Mediterranean almonds blended with spring water. At only 48 calories a glass and free from saturated fat, Alpro Almond milk is perfect for breakfast. Try it on cereal or porridge; combine with seasonal fruits or even add a dash to tea or coffee. It’s also a great ingredient to add a different dimension to kitchen favourites such as savoury pancakes, muffins or waffles.
Alpro Hazelnut drink is made from whole hazelnuts blended with spring water to create a rich and creamy drink. Delicious served hot or cold, it is an indulgent, yet guilt-free choice to relax and unwind. It’s great in homemade milkshakes and adds a special twist to a rice pudding. Tasty, but only 58 calories a glass, Alpro Hazelnut drink is an excellent way to keep afternoon snacking at bay.

Hazelnut and Fig tarts
Preparation time: 30 mins
Cooking time: 15-20 mins
2 whole eggs
2 egg yolks
500ml Alpro Hazelnut drink
4 heaped tbsp caster sugar
8 ready-made sweet pastry cases
20g chopped toasted hazelnuts
2 heaped tbsp icing sugar
50g melted dark chocolate
Pre-heat the oven to 180°C / Gas
Lightly beat the whole eggs, egg yolks and caster sugar in a large bowl.
Pop the Alpro Hazelnut drink into a small pan and warm until it reaches a gentle simmer, and then stir into the bowl with the eggs and sugar mixture.
NB. Be careful not to overheat the hazelnut drink and make sure you mix vigorously when you add the eggs, otherwise you may get some curdling.
Pour this mixture back into the small pan and thicken a little over a low heat until the consistency is smooth and thick, like custard.
Chop the figs in half and set aside for topping.
Place your tart cases on a baking tray and spoon a little of the mixture into each. Pop half a slice fig on top and dust with icing sugar.
Bake in the oven for 15-20 mins until the mixture sets and the fig is slightly caramelised.
Meanwhile, melt the dark chocolate in a glass bowl suspended over boiling water (a bain marie).
Top with the hazelnuts and a smidgen of melted dark chocolate for the finishing touch.
Downsize with mini ready-made pastries for a delicious sweet party canapé.
Corn Fritters and Roasted Plum Tomatoes
Preparation time: 15 mins
Cooking time: 30 mins
60g plain flour
¼ tsp baking powder
½ tsp salt
1 tsp ground cumin
125ml Alpro Almond milk
350g sweetcorn kernels
16 baby plum tomatoes, halved
2 cloves garlic, crushed
1 tbsp chopped fresh thyme
1 tbsp balsamic vinegar
2 handfuls of baby spinach leaves
Salt and pepper
Pre-heat the oven to 200ºC / Gas
Sift the dry ingredients into a large mixing bowl. In a separate bowl, mix the egg with the Alpro Almond milk and add to the dry ingredients. Whisk together until you have a smooth batter. Add the sweetcorn and mix to combine.
Place the tomatoes on a baking tray and sprinkle over the crushed garlic, thyme, salt and pepper and a little olive oil. Bake in the oven for about 20-30 mins. Remove from the oven and sprinkle the tomatoes with the balsamic vinegar.
Heat a little sunflower oil in a non-stick frying pan until hot, spoon the batter a tbsp at a time and cook the fritters on both sides.
Place a couple of the fritters on a plate and top with the tomatoes and the spinach to serve.
Add some zing with a dash of sweet chili sauce.
