Kaya Toast and Soft Boiled Eggs

As with so many culinary delights Kaya (another name for coconut jam) Toast is simple to make.

Simply toast or, to get a crisper more authentic finish, grill two slices of white toast.

Spread one slice with a good slather of softened butter and coconut jam before adding the other side of this tropical sandwich.

Serve with two soft boiled eggs with runny yolks, adding a dash of soy sauce and a pinch of pepper.

Enjoy, as it is across Singapore, washed down with a good coffee or cup of tea.
