"Pina colada" shots of pineapple snow, with Malibu foam.



Ingredients:


Pineapple snow:


1 tin of pineapple chunks 


Open can and pour all the contents into a container and freeze.


Malibu Foam:


200 ml double cream

4 egg yolks 

30 gm caster sugar


Firstly boil the cream and whisk the yolks and sugar to a light pale colour.

Then mix with the hot cream. 

Return the mix to the heat and cook constantly stirring until it begins to thicken. 


Chill slightly then add:


100 ml pineapple juice

50 ml Malibu (approximately you can add to taste)


Pour the contents into a soda syphon gun and gas with one cylinder.


Garnishes:


Fresh cherries

Toasted coconut shavings

Pineapple leaves


To Serve:


Scrape the frozen pineapple with a fork to create "snow" arrange in the bottom of shot glasses.

Using the syphon gun pour in the Malibu foam.

Garnish with cherries, toasted coconut and the pineapple leaves.
